Description
Strawberry shortcake sushi rolls are a fun twist on the classic dessert, combining sweet strawberries and fluffy cake in a sushi-style presentation.

- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon sugar
- 1 tablespoon rice vinegar
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 5–6 strawberries, sliced
- 1–2 tablespoons crushed graham crackers
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot, bring to a boil, then reduce heat and cover, cooking for about 20 minutes.
- Remove from heat and let it sit for 10 minutes.
- Mix sugar and rice vinegar, then fold into the rice.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Lay a sheet of plastic wrap on a bamboo mat and spread a thin layer of sushi rice over it.
- Place sliced strawberries and a sprinkle of crushed graham crackers on top of the rice.
- Roll the sushi tightly using the bamboo mat.
- Slice the roll into bite-sized pieces and serve with whipped cream.
