Description
A flavorful dish combining chicken, shrimp, and rice with a spicy kick.
Ingredients

- 1 lb chicken breast, diced
- 1 lb shrimp, peeled and deveined
- 2 cups rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, bell pepper, and celery. Sauté until softened.
- Add garlic and sauté for 1 minute.
- Add diced chicken and cook until browned.
- Stir in Cajun seasoning, salt, and pepper.
- Add rice and mix well.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Add shrimp and cook for an additional 5 minutes until shrimp are cooked through.
- Fluff with a fork and serve hot.
Notes
- Adjust spice level by adding more or less Cajun seasoning.
- Serve with fresh parsley for garnish.
- Leftovers can be stored in the fridge for up to 3 days.
