Spicy Chicken Shrimp Jambalaya

Description

A flavorful dish combining chicken, shrimp, and rice with a spicy kick.


Ingredients

  • 1 lb chicken breast, diced
  • 1 lb shrimp, peeled and deveined
  • 2 cups rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and celery. Sauté until softened.
  3. Add garlic and sauté for 1 minute.
  4. Add diced chicken and cook until browned.
  5. Stir in Cajun seasoning, salt, and pepper.
  6. Add rice and mix well.
  7. Pour in chicken broth and diced tomatoes. Bring to a boil.
  8. Reduce heat to low, cover, and simmer for 20 minutes.
  9. Add shrimp and cook for an additional 5 minutes until shrimp are cooked through.
  10. Fluff with a fork and serve hot.

Notes

  • Adjust spice level by adding more or less Cajun seasoning.
  • Serve with fresh parsley for garnish.
  • Leftovers can be stored in the fridge for up to 3 days.
