Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 can (14 oz) coconut milk
  • 2 tablespoons olive oil
  • 2 tablespoons curry powder
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup basmati rice
  • 2 cups water
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and ginger, sauté for 1-2 minutes.
  3. Add chicken pieces and cook until browned.
  4. Stir in curry powder, salt, and pepper.
  5. Pour in coconut milk and simmer for 15 minutes.
  6. In a separate pot, combine rice and water, bring to a boil.
  7. Reduce heat, cover, and cook rice for 15 minutes.
  8. Serve chicken over rice and garnish with fresh basil.
