Ingredients

- 1 can (14 oz) coconut milk
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 cup basmati rice
- 2 cups water
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and ginger, sauté for 1-2 minutes.
- Add chicken pieces and cook until browned.
- Stir in curry powder, salt, and pepper.
- Pour in coconut milk and simmer for 15 minutes.
- In a separate pot, combine rice and water, bring to a boil.
- Reduce heat, cover, and cook rice for 15 minutes.
- Serve chicken over rice and garnish with fresh basil.
