A flavorful dish combining rice and beans with traditional Spanish spices.
Ingredients

- 1 cup of long-grain rice
- 1 can (15 oz) of black beans, rinsed and drained
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 2 cups of vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until tender.
- Stir in the rice, cumin, paprika, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add black beans and stir gently.
- Cover and cook for an additional 5 minutes.
- Fluff with a fork and serve warm.

- This dish can be served as a main course or a side.
- Feel free to add corn or diced tomatoes for extra flavor.
