Description

A flavorful dish combining rice and beans with traditional Spanish spices.


Ingredients

  • 1 cup of long-grain rice
  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 cups of vegetable broth
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until tender.
  3. Stir in the rice, cumin, paprika, salt, and pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Add black beans and stir gently.
  7. Cover and cook for an additional 5 minutes.
  8. Fluff with a fork and serve warm.
