Description

A comforting Southern-style dish featuring tender chicken and fluffy dumplings, perfect for family gatherings and chilly evenings.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 tablespoon olive oil (for sautéing, optional)

Instructions

  1. Season the chicken thighs with salt and pepper. Optionally, sear the chicken in olive oil for 3-4 minutes on each side.
  2. In the crockpot, combine the sliced carrots, celery, and diced onion. Place the chicken on top if seared.
  3. Add the chicken broth, ensuring the chicken and vegetables are submerged. Season with garlic powder, thyme, and parsley, and stir gently.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  5. In a mixing bowl, combine flour, baking powder, milk, and a pinch of salt to make the dumpling batter.
  6. Remove the chicken, shred it, and return it to the crockpot. Stir in the heavy cream.
  7. Drop spoonfuls of dumpling batter over the mixture, cover, and cook on high for an additional 30-40 minutes until the dumplings are cooked through.
