- 2 medium carrots, sliced
- 2 stalks celery, sliced

- 4 cups chicken broth
- 1 cup heavy cream

- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 tablespoon olive oil (for sautéing, optional)
Instructions
- Season the chicken thighs with salt and pepper. Optionally, sear the chicken in olive oil for 3-4 minutes on each side.
- In the crockpot, combine the sliced carrots, celery, and diced onion. Place the chicken on top if seared.
- Add the chicken broth, ensuring the chicken and vegetables are submerged. Season with garlic powder, thyme, and parsley, and stir gently.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- In a mixing bowl, combine flour, baking powder, milk, and a pinch of salt to make the dumpling batter.
- Remove the chicken, shred it, and return it to the crockpot. Stir in the heavy cream.
- Drop spoonfuls of dumpling batter over the mixture, cover, and cook on high for an additional 30-40 minutes until the dumplings are cooked through.
