Soft Pumpkin Blondies are a delicious fall-inspired dessert, combining the sweetness of pumpkin with rich flavors.


Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 2 large eggs
  • 2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, brown sugar, granulated sugar, and melted butter.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Spread the batter into a greased baking pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow to cool before cutting into squares.
