Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/4 cup fresh lemon juice (preferably freshly squeezed)
  • 2 tablespoons olive oil
  • 1/4 cup fresh dill, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Lemon slices for garnish (optional)

Instructions

  1. In a small bowl, combine the chopped fresh dill, lemon juice, minced garlic, olive oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the lemon dill marinade over the salmon, ensuring that each fillet is well coated. Allow the salmon to marinate for at least 30 minutes to 1 hour in the refrigerator for optimal flavor.
  3. Lightly grease the bottom of the slow cooker with a little olive oil or cooking spray to prevent sticking.
  4. After marinating, place the salmon fillets in the slow cooker in a single layer. If desired, pour any remaining marinade over the top of the fillets for added flavor.
  5. Cover the slow cooker with the lid and cook on low for 2 to 3 hours, or until the salmon is cooked through and flakes easily with a fork.
  6. Once cooked, carefully remove the salmon from the slow cooker. Plate the fillets and drizzle with any remaining lemon dill sauce from the slow cooker. Garnish with lemon slices and additional fresh dill if desired.

  • Store leftovers in an airtight container in the refrigerator and consume within 2 days.
  • To reheat, place the salmon in the microwave for a short time, checking frequently to avoid overcooking.
