- 4 chicken thighs (bone-in, skin-on)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 cup chicken broth
- 4 medium potatoes (Yukon Gold or similar), cut into wedges
- Salt and pepper to taste
- Lemon slices (for garnish)
- Fresh parsley (for garnish, optional)
Instructions
- Pat the chicken thighs dry with paper towels and season with salt and pepper.
- In a skillet, heat 2 tablespoons of olive oil and sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear the other side for 3-4 minutes (optional).
- In a bowl, mix minced garlic, dried oregano, lemon juice, chicken broth, and remaining olive oil.
- Layer potato wedges in the slow cooker, add the seasoned chicken on top, and pour the lemon-garlic mixture over everything.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
- Carefully remove chicken and potatoes from the slow cooker and arrange on a serving platter.
- Garnish with lemon slices and fresh parsley before serving.

- For gluten-free, ensure chicken broth is gluten-free.
- Sweet potatoes can be used instead of regular potatoes.
- Skinless chicken breasts can be used for a lower-fat option.
- For a vegan version, substitute chicken with chickpeas and use vegetable broth.
