Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup chicken broth
  • 4 medium potatoes (Yukon Gold or similar), cut into wedges
  • Salt and pepper to taste
  • Lemon slices (for garnish)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. In a skillet, heat 2 tablespoons of olive oil and sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear the other side for 3-4 minutes (optional).
  3. In a bowl, mix minced garlic, dried oregano, lemon juice, chicken broth, and remaining olive oil.
  4. Layer potato wedges in the slow cooker, add the seasoned chicken on top, and pour the lemon-garlic mixture over everything.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  6. Carefully remove chicken and potatoes from the slow cooker and arrange on a serving platter.
  7. Garnish with lemon slices and fresh parsley before serving.

  • For gluten-free, ensure chicken broth is gluten-free.
  • Sweet potatoes can be used instead of regular potatoes.
  • Skinless chicken breasts can be used for a lower-fat option.
  • For a vegan version, substitute chicken with chickpeas and use vegetable broth.
