- 4 salmon fillets (approximately 6 oz each)
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, melted
- 2 tablespoons lemon juice (freshly squeezed)
- Salt and black pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the inside of your slow cooker with cooking spray or a little olive oil.
- In a small bowl, combine the melted butter, minced garlic, grated Parmesan cheese, lemon juice, salt, and black pepper. Stir until well mixed.
- Place the salmon fillets in the slow cooker, skin side down, and pour the garlic-parmesan sauce evenly over the salmon.
- Cover the slow cooker and set it to low heat. Cook for 2 to 3 hours, or until the salmon is cooked through and flakes easily with a fork.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, microwave for a minute or two or warm gently in a skillet.
- For freezing, wrap tightly in plastic wrap and then in foil; can be frozen for up to 2 months.
