A simple and hearty slow cooker beef ramen noodle dish.
Ingredients

- 1 lb beef chuck, cut into chunks
- 4 cups beef broth
- 2 cups water
- 3 tablespoons soy sauce
- 2 packets of ramen noodles
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
Instructions
- Place the beef, beef broth, water, soy sauce, garlic, and ginger in the slow cooker.
- Cook on low for 6-8 hours or until the beef is tender.
- About 30 minutes before serving, add the mushrooms and bok choy.
- Cook the ramen noodles according to package instructions.
- Serve the beef mixture over the noodles and garnish with green onions.
Notes
- You can adjust the seasoning to your taste.
- Feel free to add other vegetables like carrots or spinach.
- This dish can be made ahead and stored in the refrigerator.
