- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 cup walnuts, chopped
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar (for streusel topping)
- 1/2 cup all-purpose flour (for streusel topping)
- 1/4 cup unsalted butter, cold and cubed (for streusel topping)
- 1/2 cup walnuts, chopped (for streusel topping)
Instructions
- Grease the inside of your slow cooker with cooking spray or butter.
- In a large mixing bowl, combine the mashed bananas, granulated sugar, melted butter, eggs, and vanilla extract.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, and chopped walnuts.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a small bowl, mix together the brown sugar, flour, and chopped walnuts for the streusel. Add the cold, cubed butter and mix until it resembles coarse crumbs.
- Pour half of the banana bread batter into the prepared slow cooker. Sprinkle half of the streusel topping over the batter. Pour the remaining batter on top and finish with the remaining streusel topping.
- Cover the slow cooker and cook on low for 4 to 5 hours, or until a toothpick inserted into the center comes out clean.
Notes
- Store in an airtight container at room temperature for up to three days.
- Wrap tightly in plastic wrap and place in a freezer-safe bag for up to three months.
- Thaw frozen banana bread in the refrigerator overnight before reheating.
