Ingredients

- 1 head of garlic
- 8 oz goat cheese
- 1 cup cream cheese
- 1/2 cup sour cream
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap the garlic head in aluminum foil and roast for 30-35 minutes until soft.
- In a mixing bowl, combine roasted garlic, goat cheese, cream cheese, and sour cream.
- Add olive oil, salt, pepper, and thyme to the mixture.
- Blend until smooth and creamy.
- Transfer the dip to a serving bowl.
- Refrigerate for at least 30 minutes before serving.
Notes
- Serve with crackers, bread, or fresh vegetables.
- Store leftovers in an airtight container in the fridge.
- Can be made a day in advance for better flavor.
