A refreshing and delicious pineapple chicken salad served in flaky croissants.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup pineapple, diced
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 croissants
Instructions
- In a large bowl, combine shredded chicken, diced pineapple, chopped celery, and red onion.
- In a separate small bowl, mix mayonnaise, lemon juice, salt, and pepper.
- Pour the mayonnaise mixture over the chicken mixture and stir gently to combine.
- Cut the croissants in half and spoon the chicken salad onto the bottom half.
- Top with the other half of the croissant and serve immediately.

- Chill the chicken salad for 30 minutes for better flavor.
- Substitute Greek yogurt for mayonnaise for a healthier option.
