Description

A refreshing and delicious pineapple chicken salad served in flaky croissants.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pineapple, diced
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 croissants

Instructions

  1. In a large bowl, combine shredded chicken, diced pineapple, chopped celery, and red onion.
  2. In a separate small bowl, mix mayonnaise, lemon juice, salt, and pepper.
  3. Pour the mayonnaise mixture over the chicken mixture and stir gently to combine.
  4. Cut the croissants in half and spoon the chicken salad onto the bottom half.
  5. Top with the other half of the croissant and serve immediately.
