Description

A hearty lentil stew served over creamy mashed potatoes.


Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups mashed potatoes

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, sauté onion, carrots, celery, and garlic until soft.
  3. Add lentils, vegetable broth, cumin, thyme, salt, and pepper to the pot.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Meanwhile, prepare mashed potatoes according to your preference.
  6. Serve lentil stew over mashed potatoes.
