- 4 chicken thighs (bone-in, skin-on for best flavor)
- 1 cup jasmine rice (rinsed)
- 2 cups chicken broth
- 1/4 cup lemon juice (freshly squeezed)
- 4 cloves garlic (minced)
- 2 teaspoons fresh thyme (chopped, or 1 teaspoon dried thyme)
- 2 teaspoons fresh rosemary (chopped, or 1 teaspoon dried rosemary)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- Lemon slices (for garnish, optional)
- Fresh herbs (for garnish, optional)
Instructions
- Season the chicken thighs generously with salt and pepper on both sides.
- In a skillet over medium-high heat, add 1 tablespoon of olive oil and sear the chicken thighs skin-side down for about 4-5 minutes until golden brown. Flip and sear the other side for another 2-3 minutes.
- In the slow cooker, combine the rinsed jasmine rice, chicken broth, lemon juice, minced garlic, thyme, rosemary, and the remaining tablespoon of olive oil. Stir gently to combine.
- Lay the seared (or raw) chicken thighs on top of the rice mixture in the slow cooker.
- Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours.
- Check that the chicken has reached an internal temperature of 165°F (75°C). If the rice is not fully cooked, cook for an additional 30 minutes.
- Carefully remove the chicken thighs and fluff the rice with a fork. Serve the chicken on a bed of rice, garnished with lemon slices and fresh herbs if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or on the stovetop.
- For freezing, place in a freezer-safe container for up to 3 months.
