Description

A refreshing lemon cucumber couscous salad that combines bright flavors and healthy ingredients.


Ingredients

  • 1 cup couscous
  • 1 1/4 cups water
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, bring water to a boil.
  2. Add couscous to the boiling water, cover, and remove from heat.
  3. Let couscous sit for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine diced cucumber, cherry tomatoes, red onion, and parsley.
  5. Add the cooked couscous to the vegetable mixture.
  6. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
