Ingredients

- 1 cup couscous
- 1 1/4 cups water
- 1 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a pot, bring water to a boil.
- Add couscous to the boiling water, cover, and remove from heat.
- Let couscous sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine diced cucumber, cherry tomatoes, red onion, and parsley.
- Add the cooked couscous to the vegetable mixture.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- This salad can be made a day in advance for better flavor.
- Feel free to add other vegetables or proteins.
