Description

A creamy and cheesy pasta dish packed with hidden vegetables for a nutritious twist.


Ingredients

  • 8 oz elbow macaroni
  • 1 cup cauliflower florets
  • 1 cup butternut squash, cubed
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a pot, boil the cauliflower and butternut squash until tender, about 10 minutes.
  3. Drain the vegetables and blend them with milk, garlic powder, onion powder, salt, and pepper until smooth.
  4. In a large saucepan, melt butter over medium heat. Add the blended vegetable mixture and stir.
  5. Add the cooked macaroni and cheese to the saucepan. Mix well until the cheese melts and everything is combined.
  6. Serve hot and enjoy your hidden veggie mac and cheese.
