- 8 oz elbow macaroni
- 1 cup cauliflower florets
- 1 cup butternut squash, cubed
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions. Drain and set aside.
- In a pot, boil the cauliflower and butternut squash until tender, about 10 minutes.
- Drain the vegetables and blend them with milk, garlic powder, onion powder, salt, and pepper until smooth.
- In a large saucepan, melt butter over medium heat. Add the blended vegetable mixture and stir.
- Add the cooked macaroni and cheese to the saucepan. Mix well until the cheese melts and everything is combined.
- Serve hot and enjoy your hidden veggie mac and cheese.

- Feel free to add more vegetables like spinach or carrots.
- For a creamier texture, use heavy cream instead of milk.
