Herb Zucchini Stuffed Jumbo Shells are a delicious and healthy pasta dish filled with a flavorful mixture of zucchini, herbs, and cheese.

- 12 jumbo pasta shells
- 1 medium zucchini, grated
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo shells according to the package instructions and drain.
- In a bowl, combine the grated zucchini, ricotta, mozzarella, Parmesan, egg, basil, parsley, garlic powder, salt, and pepper.
- Fill each cooked shell with the zucchini mixture.
- Spread half of the marinara sauce on the bottom of a baking dish.
- Arrange the stuffed shells in the dish and top with the remaining marinara sauce.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until bubbly.
Notes
- Feel free to add more herbs to your liking.
- This dish can be made ahead and stored in the refrigerator before baking.
- Garnish with additional cheese or fresh herbs before serving.
