Description

Gingerbread Cheesecake Cookies are soft and chewy cookies with a creamy cheesecake center, flavored with warm spices.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. In a separate bowl, beat the cream cheese, powdered sugar, and milk until smooth.
  7. Drop tablespoon-sized balls of cookie dough onto a baking sheet.
  8. Create a small well in the center of each cookie and fill with the cream cheese mixture.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow to cool before serving.
