Description

A delightful dish combining savory flavors with tender textures, featuring garlic and parmesan chicken with baby potatoes, perfect for family dinners or gatherings.


Ingredients

  • 4 chicken thighs (bone-in, skin-on for best flavor)
  • 500 grams baby potatoes (about 1 pound)
  • 6 cloves garlic (minced)
  • 100 grams parmesan cheese (grated, about 1 cup)
  • 60 milliliters olive oil (about 1/4 cup)
  • 240 milliliters chicken broth (about 1 cup)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 1/2 teaspoon black pepper (to taste)
  • 1 teaspoon salt (to taste)

Instructions

  1. Prepare the ingredients by rinsing the baby potatoes and patting them dry. Cut larger potatoes in half and mince the garlic.
  2. Season the chicken by mixing salt, black pepper, and half of the grated parmesan cheese, then rub it all over the chicken thighs.
  3. Layer the crockpot by drizzling half of the olive oil at the bottom, adding the baby potatoes, minced garlic, and fresh thyme, then pouring the chicken broth over the potatoes.
  4. Add the seasoned chicken thighs on top of the potatoes and drizzle the remaining olive oil over the chicken.
  5. Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  6. About 30 minutes before serving, sprinkle the remaining grated parmesan cheese over the chicken and potatoes, cover, and continue cooking until melted and bubbly.
  7. Serve warm, garnished with additional fresh thyme if desired.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in the microwave or stovetop until heated through.
  • For freezing, place in a freezer-safe container for up to 3 months and thaw in the refrigerator before reheating.
