- 4 chicken thighs (bone-in, skin-on for best flavor)
- 500 grams baby potatoes (about 1 pound)
- 6 cloves garlic (minced)
- 100 grams parmesan cheese (grated, about 1 cup)
- 60 milliliters olive oil (about 1/4 cup)
- 240 milliliters chicken broth (about 1 cup)
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 1/2 teaspoon black pepper (to taste)
- 1 teaspoon salt (to taste)
Instructions
- Prepare the ingredients by rinsing the baby potatoes and patting them dry. Cut larger potatoes in half and mince the garlic.
- Season the chicken by mixing salt, black pepper, and half of the grated parmesan cheese, then rub it all over the chicken thighs.
- Layer the crockpot by drizzling half of the olive oil at the bottom, adding the baby potatoes, minced garlic, and fresh thyme, then pouring the chicken broth over the potatoes.
- Add the seasoned chicken thighs on top of the potatoes and drizzle the remaining olive oil over the chicken.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
- About 30 minutes before serving, sprinkle the remaining grated parmesan cheese over the chicken and potatoes, cover, and continue cooking until melted and bubbly.
- Serve warm, garnished with additional fresh thyme if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or stovetop until heated through.
- For freezing, place in a freezer-safe container for up to 3 months and thaw in the refrigerator before reheating.
