Ingredients

  • 1 pound of fresh shrimp, peeled and deveined
  • 1 (9-inch) buttery pie crust (store-bought or homemade)
  • 1 cup of heavy cream
  • 3 cloves of garlic, minced
  • 1/2 cup of chopped green onions
  • 1/2 cup of diced bell peppers (mix of red and green)
  • 1/4 teaspoon of cayenne pepper (adjust to taste)
  • 2 tablespoons of lemon juice
  • 1 cup of shredded cheddar cheese
  • Salt and black pepper to taste
  • 1 tablespoon of olive oil or butter (for sautéing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the diced bell peppers and chopped green onions. Cook for an additional 3-4 minutes until the vegetables are tender. Remove from heat and set aside.
  3. In a mixing bowl, combine the fresh shrimp, sautéed vegetables, lemon juice, cayenne pepper, salt, and black pepper. Toss to coat the shrimp evenly with the seasonings.
  4. In another bowl, whisk together the heavy cream and shredded cheddar cheese. Add the shrimp and vegetable mixture to the cream and cheese, stirring gently to combine.
  5. Place the pie crust in a 9-inch pie dish. Pour the shrimp and cream mixture into the pie crust, spreading it evenly.
  6. Place the pie in the preheated oven and bake for 30-35 minutes, or until the filling is set and the top is lightly golden and caramelized.
  7. Once baked, remove the pie from the oven and allow it to cool for about 10 minutes before slicing. Serve warm, garnished with additional chopped green onions if desired.
