- 1 pound of fresh shrimp, peeled and deveined
- 1 (9-inch) buttery pie crust (store-bought or homemade)
- 1 cup of heavy cream
- 3 cloves of garlic, minced
- 1/2 cup of chopped green onions
- 1/2 cup of diced bell peppers (mix of red and green)
- 1/4 teaspoon of cayenne pepper (adjust to taste)
- 2 tablespoons of lemon juice
- 1 cup of shredded cheddar cheese
- Salt and black pepper to taste
- 1 tablespoon of olive oil or butter (for sautéing)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the diced bell peppers and chopped green onions. Cook for an additional 3-4 minutes until the vegetables are tender. Remove from heat and set aside.
- In a mixing bowl, combine the fresh shrimp, sautéed vegetables, lemon juice, cayenne pepper, salt, and black pepper. Toss to coat the shrimp evenly with the seasonings.
- In another bowl, whisk together the heavy cream and shredded cheddar cheese. Add the shrimp and vegetable mixture to the cream and cheese, stirring gently to combine.
- Place the pie crust in a 9-inch pie dish. Pour the shrimp and cream mixture into the pie crust, spreading it evenly.
- Place the pie in the preheated oven and bake for 30-35 minutes, or until the filling is set and the top is lightly golden and caramelized.
- Once baked, remove the pie from the oven and allow it to cool for about 10 minutes before slicing. Serve warm, garnished with additional chopped green onions if desired.
