A simple and delicious recipe for creamy pinto beans.
Ingredients

- 2 cups dried pinto beans
- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup fresh cilantro, chopped
Instructions
- Rinse the pinto beans and soak them overnight in water.
- Drain and rinse the beans again.
- In a large pot, combine the beans, water, onion, garlic, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until beans are tender.
- Stir in the heavy cream and cilantro, cooking for an additional 5 minutes.
- Serve warm and enjoy.
Notes
- For a spicier version, add jalapeños.
- Store leftovers in an airtight container in the refrigerator.
- These beans pair well with rice or tortillas.
