A simple and delicious recipe for creamy pinto beans.


Ingredients

  • 2 cups dried pinto beans
  • 6 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the pinto beans and soak them overnight in water.
  2. Drain and rinse the beans again.
  3. In a large pot, combine the beans, water, onion, garlic, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until beans are tender.
  5. Stir in the heavy cream and cilantro, cooking for an additional 5 minutes.
  6. Serve warm and enjoy.

Notes

  • For a spicier version, add jalapeños.
  • Store leftovers in an airtight container in the refrigerator.
