Description

These crunchy quinoa veggie patties are a healthy and flavorful option for lunch or dinner.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup grated carrots
  • 1 cup chopped spinach
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, combine cooked quinoa, grated carrots, chopped spinach, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper.
  2. Mix the ingredients until well combined.
  3. Form the mixture into patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for 4-5 minutes on each side until golden brown.
  6. Remove from skillet and let drain on paper towels.
  7. Serve warm with your favorite sauce or dip.
