Description

A delightful blend of seasoned ground beef, zesty taco spices, and gooey cheese cooked to perfection in a slow cooker.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Optional toppings: sour cream, avocado, cilantro

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and return the meat to the skillet.
  2. Add the taco seasoning to the cooked meat along with a splash of water. Stir well and let it simmer for a few minutes to enhance the flavors.
  3. In your crockpot, start layering the ingredients. Begin with half of the meat mixture, followed by half of the beans, corn, and diced tomatoes. Sprinkle some crushed tortilla chips and cheese on top. Repeat the layers with the remaining ingredients.
  4. Pour the salsa over the top layer and cover the crockpot. Cook on low for 4-6 hours or on high for 2-3 hours until the cheese is melted and bubbly.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in the microwave or stovetop until heated through.
  • For freezing, portion into freezer-safe containers and it can last up to 3 months.
