- 4 cloves garlic, minced
- 1/4 cup soy sauce

- 1 teaspoon black pepper (or to taste)
- 1 tablespoon fresh thyme, chopped (plus extra for garnish)
Instructions
- Pat the chicken thighs dry with paper towels and season with black pepper.
- In a medium bowl, combine maple syrup, Dijon mustard, minced garlic, soy sauce, apple cider vinegar, and chopped fresh thyme. Whisk until well blended.
- Place the seasoned chicken thighs in the crockpot and pour the glaze over them.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the chicken from the crockpot and place on a serving platter, skimming off excess fat from the sauce if desired.
- Pour some of the remaining glaze over the chicken thighs.
- Garnish with additional fresh thyme and serve warm with sides like rice, mashed potatoes, or steamed vegetables.
