Ingredients

  • 1.5 lbs chicken thighs (about 68 pieces, bone-in or boneless)
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon black pepper (or to taste)
  • 1 tablespoon fresh thyme, chopped (plus extra for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and season with black pepper.
  2. In a medium bowl, combine maple syrup, Dijon mustard, minced garlic, soy sauce, apple cider vinegar, and chopped fresh thyme. Whisk until well blended.
  3. Place the seasoned chicken thighs in the crockpot and pour the glaze over them.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C).
  5. Remove the chicken from the crockpot and place on a serving platter, skimming off excess fat from the sauce if desired.
  6. Pour some of the remaining glaze over the chicken thighs.
  7. Garnish with additional fresh thyme and serve warm with sides like rice, mashed potatoes, or steamed vegetables.
