Crockpot Garlic Parmesan Chicken with Potatoes

Description

A comforting dish featuring tender chicken thighs and baby potatoes in a creamy garlic parmesan sauce, perfect for family dinners or gatherings.


Ingredients

  • 1.5 lbs chicken thighs (about 68 pieces)
  • 1.5 lbs baby potatoes, halved or quartered if large
  • 6 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Black pepper, to taste
  • 2 teaspoons Italian seasoning

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with black pepper and Italian seasoning.
  2. In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat.
  3. Place the halved baby potatoes at the bottom of the crockpot. Lay the seasoned chicken thighs on top of the potatoes.
  4. Pour the sautéed garlic and olive oil mixture over the chicken and potatoes. Then, add the chicken broth evenly over the top.
  5. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  6. About 15 minutes before serving, sprinkle the grated Parmesan cheese over the chicken and potatoes. Cover and let it melt into the dish.
  7. Once cooked, gently stir to combine the ingredients. Garnish with fresh chopped parsley for a pop of color. Serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in the microwave or on the stovetop until heated through.
  • For freezing, place in a freezer-safe container for up to 3 months.
