- 1.5 lbs chicken thighs (about 6–8 pieces)
- 1.5 lbs baby potatoes, halved or quartered if large
- 6 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (for garnish)
- 1 cup chicken broth
- 2 tablespoons olive oil
- Black pepper, to taste
- 2 teaspoons Italian seasoning
Instructions
- Pat the chicken thighs dry with paper towels and season both sides generously with black pepper and Italian seasoning.
- In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat.
- Place the halved baby potatoes at the bottom of the crockpot. Lay the seasoned chicken thighs on top of the potatoes.
- Pour the sautéed garlic and olive oil mixture over the chicken and potatoes. Then, add the chicken broth evenly over the top.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
- About 15 minutes before serving, sprinkle the grated Parmesan cheese over the chicken and potatoes. Cover and let it melt into the dish.
- Once cooked, gently stir to combine the ingredients. Garnish with fresh chopped parsley for a pop of color. Serve warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or on the stovetop until heated through.
- For freezing, place in a freezer-safe container for up to 3 months.
