Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups (960 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 cup (150 g) frozen peas
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 can (16 oz or 450 g) refrigerated biscuit dough

Instructions

  1. Prepare the Ingredients: Dice the carrots, celery, and onion. Mince the garlic and set aside.
  2. Layer the Ingredients in the Crockpot: Place the chicken breasts at the bottom, then add the diced vegetables on top.
  3. Add the Liquids and Seasonings: Pour in the chicken broth and heavy cream, then add thyme, bay leaves, salt, and pepper.
  4. Cook the Soup: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the Chicken: Remove the chicken, shred it, and return it to the soup.
  6. Add the Peas: Stir in the frozen peas and cook for an additional 10-15 minutes on high.
  7. Prepare the Biscuit Dough: Preheat the oven and cut the biscuit dough into quarters.
  8. Bake the Biscuits: Bake according to package instructions until golden brown.
  9. Serve the Soup: Ladle the soup into bowls and top with biscuit pieces.
