A hearty and comforting chicken parmesan soup made in the crockpot.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (15 oz) crushed tomatoes
- 1 cup marinara sauce
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Add chicken broth, crushed tomatoes, marinara sauce, onions, garlic, and Italian seasoning.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the pot.
- Stir in Parmesan cheese and mozzarella cheese until melted.
- Serve hot with crusty bread.
Notes
- For added flavor, sauté onions and garlic before adding them to the crockpot.
- Adjust seasoning according to your taste.
- This soup pairs well with a fresh salad.
