Description

A hearty and comforting chicken parmesan soup made in the crockpot.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) crushed tomatoes
  • 1 cup marinara sauce
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, crushed tomatoes, marinara sauce, onions, garlic, and Italian seasoning.
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken in the pot.
  6. Stir in Parmesan cheese and mozzarella cheese until melted.
  7. Serve hot with crusty bread.

Notes

  • For added flavor, sauté onions and garlic before adding them to the crockpot.
