Ingredients

  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup walnuts, chopped

Instructions

  1. Prepare the Crockpot by greasing it with cooking spray or lining it with parchment paper.
  2. Mix the wet ingredients: combine mashed bananas, eggs, maple syrup, and vanilla extract in a bowl and whisk until smooth.
  3. Combine the dry ingredients: whisk together flour, baking soda, ground cinnamon, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Fold in the chopped walnuts.
  5. Pour the batter into the prepared crockpot, spreading it evenly.
  6. Cover the crockpot and set it to low heat. Cook for 3 to 4 hours, or until a toothpick inserted comes out clean.
  7. Once cooked, let the banana bread cool in the crockpot for 10-15 minutes before transferring it to a wire rack to cool completely.
