Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (4.5 oz each) diced green chilies
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the ingredients by dicing the onion and mincing the garlic. Drain and rinse the white beans.
  2. Layer the chicken breasts at the bottom of the crockpot, then add the diced onion, minced garlic, drained white beans, and diced green chilies on top.
  3. Pour in the chicken broth and sprinkle the ground cumin, dried oregano, salt, and pepper over the top. Stir gently to combine.
  4. Cover the crockpot and cook on low heat for 6-8 hours or on high heat for 3-4 hours until the chicken is cooked through and tender.
  5. Remove the chicken breasts, shred them using two forks, and return the shredded chicken to the crockpot.
  6. Add the softened cream cheese in cubes and stir until fully melted and incorporated.
  7. Taste and adjust seasoning with additional salt and pepper if needed.
  8. Ladle the chili into bowls and garnish with fresh cilantro. Serve warm with tortilla chips or crusty bread.
