A rich and creamy dip made with spinach and artichokes, perfect for parties or gatherings.


Ingredients

  • 2 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup raw cashews, soaked for 4 hours
  • 1/2 cup nutritional yeast
  • 1/4 cup almond milk
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine soaked cashews, nutritional yeast, almond milk, lemon juice, garlic, onion powder, salt, and pepper. Blend until smooth.
  3. In a bowl, mix the spinach and artichokes with the blended mixture.
  4. Transfer the mixture to an oven-safe dish.
  5. Bake for 20-25 minutes until heated through and slightly golden on top.
  6. Serve warm with chips or fresh vegetables.

Notes

  • Can be made ahead and stored in the fridge before baking.
  • Adjust seasoning to your taste.
  • For a spicier dip, add red pepper flakes.
