Ingredients

- 2 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup raw cashews, soaked for 4 hours
- 1/2 cup nutritional yeast
- 1/4 cup almond milk
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine soaked cashews, nutritional yeast, almond milk, lemon juice, garlic, onion powder, salt, and pepper. Blend until smooth.
- In a bowl, mix the spinach and artichokes with the blended mixture.
- Transfer the mixture to an oven-safe dish.
- Bake for 20-25 minutes until heated through and slightly golden on top.
- Serve warm with chips or fresh vegetables.
Notes
- Can be made ahead and stored in the fridge before baking.
- Adjust seasoning to your taste.
- For a spicier dip, add red pepper flakes.
