Ingredients

- 1 can of chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced cucumbers
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped parsley
Instructions
- In a large bowl, combine the chickpeas, tahini, lemon juice, olive oil, garlic powder, salt, and pepper.
- Mix until the chickpeas are well coated.
- Add the cucumbers, cherry tomatoes, and parsley.
- Toss gently to combine all ingredients.
- Serve immediately or chill for 30 minutes before serving.

- Adjust lemon juice to taste.
- Serve with pita bread or over greens.
