Description

A refreshing and nutritious salad made with creamy tahini, chickpeas, and lemon.


Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced cucumbers
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped parsley

Instructions

  1. In a large bowl, combine the chickpeas, tahini, lemon juice, olive oil, garlic powder, salt, and pepper.
  2. Mix until the chickpeas are well coated.
  3. Add the cucumbers, cherry tomatoes, and parsley.
  4. Toss gently to combine all ingredients.
  5. Serve immediately or chill for 30 minutes before serving.
