Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Add garlic and ginger, cook for 1 minute.
  5. Stir in cumin and coriander, cook for another minute.
  6. Add lentils and vegetable broth, bring to a boil.
  7. Reduce heat and simmer for 25 minutes until lentils are tender.
  8. Stir in coconut milk and salt, cook for an additional 5 minutes.
  9. Serve warm.
