- 1 cup diced potatoes

- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter

- 1/2 teaspoon paprika
Instructions
- In a large pot, melt butter over medium heat.
- Add onions and garlic, sauté until soft.
- Add potatoes and corn, stir to combine.
- Pour in vegetable broth, bring to a boil.
- Reduce heat, simmer until potatoes are tender.
- Stir in milk, salt, pepper, and paprika.
- Cook for an additional 5 minutes.
- Blend for a smoother texture if desired.
- Serve hot.
