Description

A homemade version of Costco’s popular cashew clusters.


Ingredients

Scale
  • 2 cups cashews
  • 1 cup dark chocolate chips
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread the cashews on a baking sheet and toast for 10 minutes.
  3. In a saucepan, melt the chocolate chips over low heat.
  4. Stir in the honey and vanilla extract until well combined.
  5. Add the toasted cashews and shredded coconut to the chocolate mixture, stirring until coated.
  6. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  7. Refrigerate for 30 minutes to set.

Notes

  • Store in an airtight container in the refrigerator.
  • Feel free to substitute other nuts if desired.
