Ingredients

- 1 cup oats
- 1 cup mashed bananas (about 2 bananas)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/2 cup milk (dairy or non-dairy)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix mashed bananas, honey, milk, eggs, and vanilla extract.
- Add oats, cocoa powder, baking powder, baking soda, and salt. Stir until combined.
- Fold in chocolate chips if using.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Store muffins in an airtight container for up to 3 days.
- You can freeze muffins for up to 3 months.
- Substitute honey with agave syrup for a vegan option.
