Description

Delicious chocolate banana oatmeal muffins that are healthy and easy to make.


Ingredients

  • 1 cup mashed bananas (about 2 bananas)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/2 cup milk (dairy or non-dairy)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix mashed bananas, honey, milk, eggs, and vanilla extract.
  3. Add oats, cocoa powder, baking powder, baking soda, and salt. Stir until combined.
  4. Fold in chocolate chips if using.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
