Description

A hearty and nutritious soup made with chickpeas and potatoes.


Ingredients

  • 1 cup chickpeas, cooked
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add diced potatoes and cook for 5 minutes.
  4. Stir in cooked chickpeas, cumin, and paprika.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  7. Season with salt and black pepper.
  8. Blend if desired for a creamy texture or serve as is.
  9. Garnish with fresh herbs if preferred.
