Ingredients

- 2 medium potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth

- Salt to taste

- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add diced potatoes and cook for 5 minutes.
- Stir in cooked chickpeas, cumin, and paprika.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Season with salt and black pepper.
- Blend if desired for a creamy texture or serve as is.
- Garnish with fresh herbs if preferred.
