- 4 banana peppers
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the banana peppers and remove the seeds.
- In a bowl, mix cream cheese, cheddar cheese, garlic, paprika, salt, and pepper.
- Stuff the banana peppers with the cheese mixture.
- Place the stuffed peppers in a baking dish and bake for 20 minutes.
- In a pot, sauté onion until translucent.
- Add vegetable broth and bring to a boil.
- Reduce heat and add the baked banana peppers to the pot.
- Simmer for 10 minutes, then serve hot.
