Ingredients

  • 4 banana peppers
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the banana peppers and remove the seeds.
  3. In a bowl, mix cream cheese, cheddar cheese, garlic, paprika, salt, and pepper.
  4. Stuff the banana peppers with the cheese mixture.
  5. Place the stuffed peppers in a baking dish and bake for 20 minutes.
  6. In a pot, sauté onion until translucent.
  7. Add vegetable broth and bring to a boil.
  8. Reduce heat and add the baked banana peppers to the pot.
  9. Simmer for 10 minutes, then serve hot.
