Description

Healthy and delicious beet muffins made with whole ingredients.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1/2 cup grated cooked beets
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together beets, applesauce, oil, eggs, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Pour batter into muffin tins lined with paper cups.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
