- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 cup fresh basil leaves
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons vegetable oil
- Salt to taste
- 1 tablespoon lime juice
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Add chicken and cook until browned.
- Stir in red curry paste and coconut milk. Bring to a simmer.
- Add basil leaves and lime juice. Cook for 5 more minutes.
- Season with salt to taste and serve hot.
