Ingredients

  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 cup fresh basil leaves
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 1 tablespoon lime juice

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add chicken and cook until browned.
  4. Stir in red curry paste and coconut milk. Bring to a simmer.
  5. Add basil leaves and lime juice. Cook for 5 more minutes.
  6. Season with salt to taste and serve hot.
