  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 cup balsamic vinegar
  • 8 ounces mushrooms, sliced (cremini or button mushrooms work well)
  • 3 medium carrots, sliced into rounds
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for browning the beef)

Instructions

  1. Prepare the ingredients by cutting the beef into 1-inch cubes, chopping the onion, slicing the mushrooms, and mincing the garlic.
  2. Brown the beef in a skillet with olive oil over medium-high heat for about 5-7 minutes.
  3. Sauté the onions and mushrooms in the same skillet for about 5 minutes, then add the minced garlic and cook for an additional minute.
  4. Combine the browned beef and sautéed vegetables in the crockpot, adding the sliced carrots, balsamic vinegar, beef broth, dried thyme, and bay leaves. Stir well.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is tender.
  6. Adjust seasoning with salt and pepper before serving, and remove bay leaves.
