- 4 cod fillets
- 1 can (400ml) coconut milk
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix coconut milk, lemon juice, garlic, olive oil, salt, and pepper.
- Place cod fillets in a baking dish.
- Pour the coconut lemon sauce over the cod fillets.
- Bake for 20-25 minutes or until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
